Ingredients

Scale

Soup Base

  • 1 1/2 tbsp olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, chopped
  • 1 bell pepper, chopped

Spices

  • 2 tsp chili powder
  • 1 tsp cumin
  • 3/4 tsp salt

Liquids and Beans

  • 3 to 3 1/2 cups vegetable broth
  • 4 cans black beans, rinsed and drained

Instructions

  1. Heat the oil and sauté aromatics: Heat olive oil in a large soup pot over medium heat for about 1 minute. Add the diced onion and chopped garlic, cooking for 4-5 minutes until the onion becomes translucent and fragrant.
  2. Add spices and bell pepper: Stir in the chili powder, cumin, chopped bell pepper, and salt. Cook for an additional 1 minute to release the spices’ flavors.
  3. Add broth and black beans: Pour in the vegetable broth and add the rinsed and drained black beans. Bring the mixture to a gentle simmer over medium-low heat.
  4. Simmer the soup: Let the soup cook uncovered for 20 minutes, stirring occasionally to prevent sticking. Adjust the heat as needed to maintain a gentle simmer.
  5. Blend the soup: Remove the soup from heat and let it cool for 5-10 minutes. Blend the soup either fully for a smooth texture or partially for a chunkier consistency, according to your preference. Add additional broth if you want a thinner soup.
  6. Serve and garnish: Ladle the soup into bowls and top with your favorite garnishes such as sour cream, chopped cilantro, avocado, shredded cheese, or lime wedges. Enjoy warm.

Notes

  • You can use canned or freshly cooked black beans; just be sure to rinse and drain canned beans.
  • Adjust the chili powder amount to control the soup’s spiciness.
  • For a creamier soup, blend fully and add a splash of coconut milk or sour cream.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • This soup freezes well; freeze in portions and thaw overnight before reheating.
