Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 1/2 cups water
  • 1 packet (1 oz) taco seasoning
  • 2 tbsp ranch seasoning mix (optional)

Canned Ingredients

  • 2 cans (32 oz) pinto beans, drained
  • 1 can (16 oz) corn, drained
  • 1 can (10 oz) Rotel Original diced tomatoes with onions and peppers
  • 1 can (15 oz) black beans, drained
  • 2 cans (30 oz total) crushed tomatoes

Instructions

  1. Cook Beef and Onion: In a large pot set to high heat, add the ground beef and chopped onion. Cook until the beef starts sizzling, breaking it up with a spatula to ensure even cooking.
  2. Brown the Beef: Reduce the heat to medium-high and cook the beef and onion mixture, stirring every minute, until the ground beef is fully browned and cooked through, about 7 minutes.
  3. Prepare Canned Ingredients: While the beef cooks, open all the cans of beans, corn, and tomatoes. Drain the beans and corn to remove excess liquid.
  4. Combine Ingredients: Once the beef and onions are cooked, add 2 1/2 cups of water along with all the drained canned ingredients to the pot. Stir in the taco seasoning packet and ranch seasoning mix for flavor.
  5. Simmer the Soup: Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and let the soup simmer gently for 20 minutes to allow flavors to meld.
  6. Serve and Garnish: Ladle the soup into bowls and top with your favorite garnishes such as shredded cheese, chopped green onions, or a dollop of sour cream for extra richness and crunch.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • The ranch seasoning mix is optional but adds a subtle tangy flavor to the soup.
  • Adjust the amount of taco seasoning if you prefer a milder or spicier soup.
  • Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
  • For a vegetarian version, omit the ground beef and use vegetable broth instead of water.
