Ingredients

Scale

Bean Layer

  • 1 16 oz can refried beans (or 2 cups homemade)
  • 1 10 oz can diced tomatoes with green chiles
  • 1 to 2 tbsp taco seasoning

Guacamole Layer

  • 3 medium avocados
  • 1 lime (juiced, about 1 1/2 tbsp)
  • 1/4 cup cilantro (chopped)
  • 1 tsp garlic salt

Sour Cream Layer

  • 1 1/2 cups sour cream

Toppings

  • 2 cups cheddar cheese (finely shredded)
  • 1/3 cup black olives (sliced)
  • 3/4 cup Roma tomatoes (diced)
  • 1/3 cup green onions (sliced)

Instructions

  1. Prepare the bean layer: In a mixing bowl, combine the refried beans, diced tomatoes with green chiles, and taco seasoning. Whisk them together until thoroughly mixed. Spread this mixture evenly into the bottom of a 7″x11″ casserole dish to form the first layer.
  2. Make the guacamole layer: In a separate bowl, mash the avocados with lime juice, chopped cilantro, and garlic salt until you reach the desired consistency. Spread this guacamole layer evenly over the bean mixture in the casserole dish.
  3. Add the sour cream layer: Stir the sour cream until smooth and creamy. Then, spread it evenly over the guacamole layer, creating the third layer of the dip.
  4. Top with cheese and vegetables: Evenly sprinkle the finely shredded cheddar cheese over the sour cream layer. Then top this with diced Roma tomatoes, sliced black olives, and sliced green onions to complete the seven layers.
  5. Chill and serve: Cover the assembled dip with plastic wrap and refrigerate until ready to serve. Keeping it chilled helps the flavors meld together and makes it easier to serve.

Notes

  • For best flavor, prepare the dip at least an hour before serving to allow layers to meld.
  • Use fresh, ripe avocados for a creamy guacamole layer.
  • Optional: serve with tortilla chips, crackers, or sliced veggies for dipping.
  • Can be customized with additional toppings like jalapeños or green chilies for extra heat.
  • Keep covered and refrigerated to prevent the avocado from browning.
