Instructions

  1. Combine dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and a pinch of salt to evenly distribute the leavening agent and seasoning.
  2. Add cottage cheese: Create a well in the center of the dry mixture and add the cottage cheese. Using a fork or spatula, mix until a chunky dough forms. Alternatively, use a stand mixer with a dough hook for this step.
  3. Knead the dough: Turn the dough onto a floured surface and knead with your hands for 1-2 minutes until it forms a semi-smooth ball. Add flour if the dough feels sticky.
  4. Shape bagels: Divide the dough into 4 equal parts. Roll each into a 6-7 inch log about 3/4 inch thick, then join the ends to form bagels.
