Ingredients

Scale

For the Bread Batter

  • 1/2 cup (113g) unsalted butter, softened
  • 2/3 cup (133g) granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup (120ml) milk

For the Apple Mixture

  • 2 medium apples, peeled, cored, and diced (mix of tart & sweet)
  • 1/3 cup (67g) brown sugar
  • 1 tsp ground cinnamon

For the Glaze

  • 1/2 cup (60g) powdered sugar
  • 12 tbsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper to ensure easy removal.
  2. Prepare Cinnamon-Apple Mixture: In a medium bowl, toss the peeled, cored, and diced apples with brown sugar and ground cinnamon. Set this mixture aside to allow the flavors to meld.
  3. Cream Butter and Sugar: In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy to ensure a tender crumb.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next. Then add the vanilla extract and mix well.
  5. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and baking powder.
  6. Make the Batter: Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined to avoid overworking the batter.
  7. Assemble the Loaf: Pour half of the batter into the prepared loaf pan. Spread half of the cinnamon apple mixture evenly over the batter. Repeat with the remaining batter and apple mixture. Lightly swirl the top with a knife to create a marbled effect.
  8. Bake: Bake for 50–55 minutes, or until a toothpick inserted into the center of the bread comes out clean. The bread should be golden brown and slightly springy to the touch.
  9. Cool the Bread: Allow the bread to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before glazing.
  10. Prepare and Apply Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze evenly over the cooled bread for a sweet finishing touch.
  11. Serve: Slice and enjoy the bread warm or at room temperature as a delightful snack or breakfast treat.

Notes

  • Use a mix of tart and sweet apples (like Granny Smith and Fuji) for balanced flavor.
  • Ensure batter is not overmixed to keep the bread tender.
  • The glaze consistency can be adjusted by adding more milk for a thinner drizzle or more powdered sugar for a thicker glaze.
  • Store the bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • The bread can be frozen for up to 2 months; thaw completely before glazing.
