Wet Ingredients:

  • 2 large eggs
  • 1 ⅓ cups all-natural unsweetened applesauce
  • ½ cup vegetable oil
  • ½ cup brown sugar

  • ½ cup rolled oats
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven: Preheat the oven to 425°F and line a standard 12-count muffin tin with baking cups.
  2. Prepare dry ingredients: In a medium bowl, whisk together the flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and salt.
  3. Mix wet ingredients: In a large bowl, beat the eggs until smooth. Add the applesauce, vegetable oil, and brown sugar, stirring until well combined.
  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the rolled oats and chopped walnuts.
  5. Fill muffin cups: Spoon the batter into the muffin cups, filling them almost to the top.
  6. Bake: Bake at 425°F for 5 minutes, then reduce the temperature to 350°F and bake for an additional 11-15 minutes, or until a toothpick inserted in the center comes out clean.
