Ingredients

Scale

Shrimp Marinade:

  • 1 lb large raw shrimp (2126 count), peeled and deveined
  • 2 Tbsp fresh lemon juice (from 1 small or ½ large lemon)
  • ¼ cup extra light olive oil (not extra virgin)
  • 1 Tbsp soy sauce
  • 1 Tbsp honey
  • 1 Tbsp Cajun seasoning
  • 1 Tbsp fresh parsley, finely chopped

Optional Garnish:

  • ½ Tbsp fresh parsley, finely chopped
  • ½ tsp lemon zest, freshly grated

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together lemon juice, olive oil, soy sauce, honey, Cajun seasoning, and chopped parsley until well combined.
  2. Add the shrimp to the bowl and stir until evenly coated. Cover and refrigerate for 1 hour, stirring occasionally to marinate the shrimp thoroughly.
  3. Prepare the Garnish: In a small bowl, combine parsley and lemon zest. Cover and refrigerate until ready to serve.
  4. Bake the Shrimp: Preheat your oven to 450°F (230°C). Transfer the marinated shrimp to a baking dish, arranging them in a single layer. Bake uncovered for 8-10 minutes, or until the shrimp turn pink and firm. Avoid overcooking to prevent a rubbery texture. Sprinkle the shrimp with the prepared garnish before serving.
