Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and line an 8×8 inch square baking dish with parchment paper to prevent sticking and ensure easy removal.
  2. Mix Wet Ingredients: In a large bowl, whisk together 2 cups of Greek yogurt, 4 large eggs, 1/4 cup maple syrup, and 1 teaspoon vanilla extract until the mixture is smooth and uniform.
  3. Add Cornstarch and Berries: Whisk in 3 tablespoons of cornstarch thoroughly to help thicken the yogurt mixture. Gently fold in 1 cup of berries to distribute them without breaking.
  4. Pour and Top: Pour the yogurt-berry mixture into the prepared baking dish and evenly sprinkle the remaining 1/2 cup of berries on top for a colorful finish.
  5. Bake: Place the dish in the oven and bake for about 45 minutes, or until the yogurt custard sets firmly and is no longer jiggly in the center.
  6. Cool and Serve: Remove from the oven and allow to cool almost completely. Then cut into 9 squares to serve. Enjoy on its own or with extra maple syrup drizzled on top if desired.
