Cake:
- 3 ripe bananas (mashed – about 1 1/4 cups of mashed banana)
- 1 1/4 cups granulated sugar
- 1 cup sour cream
- 1/2 cup vegetable oil (or unflavored coconut oil)
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
Cream Cheese Frosting:
- 1 (8 oz. pkg.) cream cheese (room temperature)
- 1/2 cup butter (room temperature)
- 1 teaspoon vanilla extract
- 4 1/4–5 cups powdered sugar
- Additional toppings: chopped pecans or walnuts and/or banana slices
- Preheat oven and prepare pan: Preheat oven to 350 degrees F. Lightly spray a 9×13-inch pan with non-stick baking spray.
- Mix wet ingredients: In a large bowl, mash the bananas and mix in sugar, oil, sour cream, eggs, and vanilla until well combined.
- Combine dry ingredients: In a separate bowl, mix flour, baking powder, baking soda, and salt.
- Combine wet and dry ingredients: Gradually add dry ingredients to wet mixture and mix until well combined. Fold in nuts if using.
- Bake: Pour batter into prepared pan and bake for 32-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool.
- Make frosting: In a mixing bowl, cream together cream cheese and butter. Add vanilla and gradually mix in powdered sugar until smooth.
- Frost the cake: Spread frosting evenly over cooled cake. Top with nuts and/or banana slices if desired.
Notes
- You can add a sprinkle of cinnamon or nutmeg to the cake batter for extra flavor.
