Hummus Base

  • 1 can cooked chickpeas (drained net weight: 265g or 9 oz)
  • 2 tbsp olive oil
  • Juice of half a lemon
  • 60g tahini (1/4 cup)
  • 1 garlic clove
  • 1/4 tsp salt
  • 1/4 tsp cumin
  • 45 ice cubes

Instructions

  1. Prepare Ingredients: Pour the chickpeas into a sieve and rinse them under cold water until no more bubbles form from the aquafaba. Peel the garlic clove and cut the lemon in half to prepare for juicing.
  2. Blend Base: Place the rinsed chickpeas into the food processor along with the garlic clove, tahini, salt, olive oil, and cumin. Blend on medium speed until the mixture becomes crumbly yet creamy.
  3. Add Ice Cubes and Blend: While the processor runs, add the ice cubes in batches and blend at the highest speed for 1 to 3 minutes, depending on your machine, until a smooth, creamy, and airy hummus forms. Adjust seasoning with additional salt, lemon juice, or garlic if needed. If the hummus is too thick, add a small amount of cold water and blend again to achieve desired consistency.
  4. Serve and Garnish: Transfer the hummus to a deep plate and garnish with a drizzle of olive oil, reserved chickpeas, fresh herbs, and a sprinkle of paprika powder as desired.

  • For a smoother texture, be sure to blend long enough at the highest speed with the ice cubes.
