These BBQ Chicken Flatbreads are a delicious twist on classic pizza, featuring tender chicken coated in flavorful spices, layered on flatbreads with BBQ sauce, mozzarella cheese, and veggies, then baked to perfection. A perfect meal for a cozy night in!

For the Chicken:

  • 1 large boneless, skinless chicken breast (about 300 g/10.5 oz), cut into small bite-sized pieces (or chicken thighs)
  • 1 tbsp olive oil
  • 1 tsp sweet paprika
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp sea salt flakes
  • ½ tsp cracked black pepper

For the Flatbreads:

  • 4 flatbreads
  • ¼ cup (60 ml) store-bought BBQ sauce
  • 1 cup (150 g) shredded mozzarella
  • 1 small red onion, finely sliced
  • 1 small capsicum (bell pepper), finely sliced
  • 1 tbsp freshly chopped coriander (cilantro), to garnish (optional)

Instructions

  1. Chicken: Place the chicken in a medium bowl and add the olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until evenly coated. Cook in a pan until browned and cooked through.
  2. Flatbreads: Preheat the oven and line a baking tray. Spread BBQ sauce on each flatbread, sprinkle with mozzarella, top with chicken, onions, and capsicum. Bake until cheese is melted and bubbly.
  3. Sprinkle with coriander and serve hot.

Notes

  • You can use chicken thighs instead of chicken breast for a more flavorful option.
  • Feel free to customize the toppings with your favorite ingredients like jalapenos or pineapple.
