Ingredients

Scale

Meat and Aromatics

  • 1 lb ground beef or stew meat
  • 1 onion, diced
  • 3 cloves garlic, minced

Vegetables

  • 3 large potatoes, diced
  • 3 carrots, sliced
  • 2 cups green beans (fresh, canned, or frozen)
  • 1 ½ cups corn (canned or frozen)
  • 1 cup peas
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce

Liquids and Seasonings

  • 6 cups beef broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • Optional: 1 tbsp Worcestershire sauce for depth

Instructions

  1. Brown the beef: In a large pot over medium heat, add the ground beef or stew meat and cook until browned, breaking it apart as it cooks. Once the beef is cooked through, drain any excess grease from the pot to keep the soup from being too greasy.
  2. Sauté aromatics: Add the diced onion and minced garlic to the pot with the browned beef. Cook for about 3 minutes, stirring occasionally, until the onion is softened and fragrant.
  3. Add vegetables and tomatoes: Stir in the diced potatoes, sliced carrots, green beans, corn, peas, diced tomatoes, and tomato sauce, mixing everything well to combine.
  4. Pour in broth and season: Add the beef broth to the pot, then season with salt, pepper, paprika, garlic powder, onion powder, dried basil, and dried parsley. If desired, add Worcestershire sauce for an added depth of flavor. Stir thoroughly to distribute the seasoning evenly.
  5. Bring to a boil: Increase the heat to bring the soup mixture to a rolling boil, which helps to meld the flavors together.
  6. Simmer: Reduce the heat to low, cover the pot, and let the soup simmer gently for 45 to 60 minutes. This allows the vegetables to become tender and the flavors to develop fully.
  7. Adjust seasoning: Taste the soup and adjust the salt, pepper, or other seasonings as needed to suit your preference.
  8. Serve: Ladle the soup into bowls and serve hot with your choice of sides like cornbread, crackers, or crusty bread for a complete comforting meal.

Notes

  • Use fresh or frozen vegetables interchangeably based on availability.
  • For thicker soup, mash some of the potatoes while simmering.
  • Beef stew meat can be used in place of ground beef for chunkier texture.
  • Leftovers store well in the refrigerator for up to 4 days and freeze great for up to 3 months.
  • Add Worcestershire sauce to enhance umami flavor, but it’s optional.
