Noodles
- 1 pound lo mein noodles, cooked according to package instructions
Protein
- 2 cups chicken, sliced in strips
- 1 tablespoon soy sauce (for marinating chicken)
Vegetables
- 2 cups mushrooms, sliced
- 1 bell pepper, julienned
- 1 large onion, sliced julienne
- 2 bunches bok choy, sliced (about 2 cups)
- 1 cup sliced green onions
- 3 garlic cloves, minced
Other
- 1–2 tablespoons oil (for cooking)
- 1 cup lo mein sauce (store-bought or homemade)
- Prepare the chicken: Heat 1-2 tablespoons of oil in a pan over medium-high heat. Add the chicken strips that have been marinated with 1 tablespoon soy sauce, and fry until golden brown and cooked through. Remove the chicken from the pan and set aside.
- Sauté onions and garlic: In the same pan with chicken drippings and leftover oil, add the sliced onions and minced garlic. Sauté them until the onions become translucent and fragrant, about 2-3 minutes.
- Cook vegetables: Add the mushrooms, julienned bell pepper, and sliced bok choy to the pan. Stir-fry the vegetables until tender but still crisp, around 4-5 minutes.
- Combine chicken and sauce: Return the cooked chicken to the pan with the vegetables. Pour in 1 cup of lo mein sauce and simmer for about 2 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Toss with noodles: Add the cooked lo mein noodles to the pan. Toss everything together thoroughly so the noodles soak up the sauce and are well combined with the chicken and vegetables.
- Garnish and serve: Sprinkle the sliced green onions on top as a garnish. Remove the pan from heat and serve the Chicken Lo Mein hot for the best flavor and texture.
Notes
- Use fresh vegetables for the best texture and nutrition.
- Lo mein sauce can be store-bought or homemade; adjust salt accordingly.
- Marinating the chicken in soy sauce enhances flavor but is optional.
- To make it vegetarian, substitute chicken with tofu or extra vegetables.
- Cook noodles just until al dente, as they will finish cooking in the sauce.
- This recipe can be doubled or halved for different serving sizes.
