Instructions

  1. Prepare the Lemon: Wash and dry the lemon thoroughly. Using a zester or fine grater, zest the entire peel of the lemon to capture its aromatic oils. Then cut the lemon in half and juice one half, reserving the juice for the smoothie.
  2. Add Ingredients to Blender: Pour the unsweetened almond milk into a high-speed blender first. Follow by adding the blueberries, avocado chunks, Greek yogurt, vanilla extract, chia seeds, cinnamon, the reserved lemon juice, and lemon zest.
  3. Blend Until Smooth: Blend all ingredients on high speed until the mixture is fully smooth and creamy. If the smoothie is too thick or you want a thinner consistency, gradually add a little more almond milk.
  4. Adjust Temperature and Flavor: Add ice cubes if needed to chill the smoothie, especially if fresh (not frozen) ingredients were used. Taste and adjust sweetness or lemon intensity if you desire, considering adding the juice of the other half lemon for extra zest.
  5. Serve: Pour into glasses and enjoy immediately for the best fresh flavor and texture.
