  • 1 1/4 cup sugar
  • 3 tablespoons bourbon

Cake Batter:

  • 3 eggs
  • 1 cup all-purpose flour
  • 1/4 cup almond flour
  • 1/2 teaspoon vanilla
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9-inch cake pan with parchment paper and butter the paper.
  2. Arrange the peaches over the parchment, starting at the center and working your way out. Sprinkle 1/4 teaspoon cinnamon over the peaches.
  3. Make the caramel: Combine 1/4 cup water with 1/2 cup sugar. Heat over medium-high heat until it turns light brown (about 10-15 minutes). Remove from heat, add 1 tablespoon bourbon, and pour evenly over the peaches.
  4. Make the cake batter: Beat butter and 3/4 cup sugar until light and fluffy. Beat in eggs one at a time, then add vanilla and 2 tablespoons bourbon.
