Ingredients

Scale

For the Pastry

  • 1 sheet puff pastry, thawed
  • 5 oz brie cheese, cut into small chunks
  • 1 egg, beaten (for egg wash)

For the Topping

  • ⅓ cup chopped toasted walnuts
  • ¼ cup dried cranberries
  • 2 tbsp honey (plus extra for drizzling)
  • 1 tbsp fresh thyme or chopped parsley (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for perfectly puffed pastry.
  2. Prepare Pastry Squares: Cut the thawed puff pastry sheet into 12 equal squares to create bite-sized pieces.
  3. Add Brie: Place a chunk of brie cheese in the center of each pastry square, allowing room to fold if desired.
  4. Shape Pastries: You may fold the edges of each square slightly inward to contain the filling or leave them open for a rustic look.
  5. Apply Egg Wash: Lightly brush each pastry square with the beaten egg to give them a beautiful golden shine during baking.
  6. Bake: Place the pastries on a baking sheet and bake for 12–15 minutes or until they are beautifully puffed up and golden brown.
  7. Mix Topping: While pastries bake, mix the chopped toasted walnuts, dried cranberries, and 2 tablespoons of honey in a small bowl until well combined.
  8. Top Pastries: Spoon the sticky walnut and cranberry mixture over the warm pastries right after they come out of the oven.
  9. Drizzle Honey: Drizzle additional honey over the pastries for extra gloss and sweetness.
  10. Garnish: Finish by sprinkling fresh thyme or chopped parsley on top to add a fresh herbal note and brighten the flavors.

Notes

  • Make sure the puff pastry is fully thawed before cutting and baking for the best texture.
  • To toast walnuts, heat them in a dry skillet over medium heat for 3-5 minutes until fragrant, stirring frequently to avoid burning.
  • For a vegetarian option, ensure the brie used does not contain animal-derived rennet.
  • The toppings can be prepared in advance and stored separately to keep the pastry crisp.
  • These bites are best served warm for gooey brie and crisp pastry.
