Instructions

  1. Boil broccoli: Cut 1 pound of broccoli into small florets. Bring 1 gallon (3½ liters) of water to a boil, adding 1 tablespoon sea salt. Boil the broccoli for about 5 minutes until fork tender, then remove from water but do not discard the water.
  2. Make the sauce: Heat 3 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add 2 cloves of thinly sliced garlic and ¼ teaspoon red pepper flakes, sautéing for about 1 minute until fragrant. Add the boiled broccoli to the skillet along with 1 cup of the reserved cooking water. Simmer for 10 minutes or until the broccoli is very tender. Mash the broccoli with a fork or blend with an immersion blender until creamy.
  3. Cook the pasta: While the broccoli simmers, cook 12 ounces of short pasta in the same water used for boiling the broccoli, following the package instructions but reduce cooking time by 2 minutes to keep pasta slightly firm. Drain pasta, reserving 1 cup of pasta cooking water.
  4. Add pasta to sauce: Add the drained pasta to the skillet with the broccoli sauce. Stir in ½ cup grated parmesan cheese and cook together for about 1 minute, adding reserved pasta water as needed to achieve a creamy consistency.
  5. Serve: Taste and adjust seasoning if necessary. Serve immediately garnished with fresh basil leaves and shaved parmesan cheese on top.
