Ingredients

Scale

Hazelnut Dukkah

  • 1/2 cup hazelnuts
  • 2 Tbsp. Everything Bagel spice
  • 1/2 tsp. garam masala
  • 1/4 tsp. kosher salt

Green Beans

  • 1 1/2 lbs. fresh green beans, trimmed
  • 3 Tbsp. unsalted butter
  • 1/2 tsp. kosher salt
  • 1 to 2 tsp. orange zest

Instructions

  1. Toast and prepare hazelnuts: Preheat your oven to 350°F (175°C). Spread the hazelnuts on a rimmed baking sheet and roast them for 8 to 10 minutes until they become fragrant. Let them cool slightly, then rub the skins off using a towel. Finely chop the peeled hazelnuts on a cutting board.
  2. Make the dukkah spice blend: Place the chopped hazelnuts in a bowl. Add the Everything Bagel spice, garam masala, and 1/4 teaspoon kosher salt to the nuts. Mix well to combine the flavors.
  3. Cook the green beans: Bring a large pot of water to a boil and add the trimmed green beans. Cook them until crisp-tender, about 4 minutes. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Drain again and dry thoroughly with a towel.
  4. Brown the butter and sauté beans: In a large skillet over medium-high heat, melt the unsalted butter. Continue cooking the butter until it turns a dark amber color and releases a nutty aroma, indicating it has browned properly. Add the prepared green beans to the skillet and sauté them for 4 to 5 minutes until heated through. Season with the remaining 1/2 teaspoon kosher salt.
  5. Serve: Transfer the sautéed green beans to a serving platter. Sprinkle the hazelnut dukkah mixture evenly over the beans and garnish with 1 to 2 teaspoons of fresh orange zest for a bright finish.

Notes

  • Be careful not to burn the butter while browning; watch for the color change and nutty smell.
  • You can substitute hazelnuts with almonds or pistachios if preferred, but the flavor will differ slightly.
  • Make sure to dry the green beans thoroughly before sautéing to get the best texture.
  • Everything Bagel spice typically contains sesame seeds, poppy seeds, dried garlic, dried onion, and salt – adjust seasoning if using a different spice blend.
  • This dish pairs well with roasted meats or as part of a holiday vegetable platter.
