  • 1/4 cup water
  • 2 Tbsp Kristy’s Homemade Taco Seasoning
  • 1 Tbsp tomato paste

Instructions

  1. Preheat the oven: Set your oven to 375 degrees Fahrenheit to prepare for baking the burrito pie.
  2. Cook the ground beef: In a skillet over medium heat, cook and scramble the 1 lb of 93% lean ground beef until thoroughly cooked and no longer pink.
  3. Combine seasoning and beans: Stir in 2 tablespoons of Kristy’s Homemade Taco Seasoning, 1/4 cup of water, 1 tablespoon of tomato paste, and 1/4 cup of fat free refried beans into the cooked beef, mixing well to incorporate all flavors.
  4. Add dairy and salsa: Remove the skillet from heat and stir in 1/2 cup of 2% cottage cheese, 2 eggs, and 1/2 cup of Kristy’s Homemade Salsa until evenly combined.
  5. Assemble the pie layer-by-layer: Grease a pie pan and place one low carb tortilla at the bottom. Spread one-third of the meat mixture evenly over the tortilla.
  6. Add cheese and second tortilla: Sprinkle 3/4 cup of freshly shredded colby jack cheese on the meat layer, then place the second tortilla on top.
  7. Layer again: Spread another one-third of the meat mixture over the second tortilla, then cover with the third tortilla.
  8. Finish assembling: Spread the remaining meat mixture on top of the third tortilla and cover it with the last of the shredded cheese.
  9. Bake: Place the assembled burrito pie in the preheated oven and bake for 28 to 30 minutes, until the cheese is melted, bubbly, and lightly golden.
