  • 1/4 cup all-purpose flour

  • 8 ounces mushrooms, sliced
  • 1 cup Marsala wine
  • 1 cup chicken stock
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Pound the chicken breasts: Place the chicken breasts between plastic wrap and pound them to 1/2-inch thickness.
  2. Dredge the chicken: Season flour with salt and pepper, then coat the chicken in the seasoned flour.
  3. Cook the chicken: Sear the chicken in olive oil until golden and cooked through.
  4. Sauté shallots and mushrooms: Cook shallots and mushrooms until softened.
  5. Add wine and stock: Pour in Marsala wine and chicken stock; simmer to reduce.
