Instructions

  1. Cook the Chicken: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the cubed chicken breast along with salt, pepper, chili powder, cumin, dried cilantro, and minced garlic. Cook, stirring occasionally, until the chicken is fully cooked through and lightly browned.
  2. Add Sauce and Rice: To the skillet, add the can of Rotel (with juices), tomato sauce, chicken broth, and rinsed uncooked rice. Stir everything well to combine. Cover the skillet with a lid and reduce the heat to medium-low.
