These Cheesy Corn Fritters are a delightful mix of sweet corn, savory cheese, and a hint of spice. Perfect as a side dish or appetizer, these fritters are crispy on the outside and tender on the inside.

Ingredients

Scale

For the Fritters:

  • 1 large egg
  • 1/3 cup whole milk
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground cayenne
  • 1 tablespoon granulated sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 cups corn kernels (fresh or frozen and thawed)
  • 1/4 cup chopped scallions/green onions
  • 1 cup shredded cheese (cheddar, mozzarella, pepper jack, etc.)
  • Vegetable oil (coconut oil may be used instead)

Instructions

  1. Fritter Batter: In a large bowl, whisk together eggs, milk, salt, garlic powder, black pepper, and cayenne. Add flour and baking powder, then stir in corn, scallions, and cheese.
  2. Frying: Heat a skillet with oil. Spoon batter into the skillet, flatten into patties, and fry until golden on both sides.
  3. Serving: Drain on paper towels and serve warm or at room temperature.

Notes

  • For added flavor, try mixing in diced jalapenos or bell peppers.
  • These fritters are best enjoyed fresh but can be reheated in a toaster oven for a crispy texture.
