Cherry Juice

  • 2 cups of cherries (pitted)
  • 1/4 cup of water
  • 6 tablespoons of granulated sugar
  • 2 tablespoons of lemon juice

Cherry Infused Mascarpone Filling

  • 1 ½ cups of heavy cream or double cream
  • 16 oz (450g) mascarpone cheese
  • 1/2 cup of granulated sugar
  • 2 teaspoons of vanilla extract
  • Cooled cherry juice (from above)

Assembly

  • 1.5 cups brewed coffee (cooled)
  • 2 shots of cherry amaretto (plus 1 optional shot for cherry sauce)
  • 260 g Ladyfingers (enough to fill the dish)

Cherry Sauce

  • 2 cups frozen or fresh pitted cherries
  • 1/4 cup water (4 tbsp if using frozen cherries)
  • 3 tablespoons of sugar
  • 2 teaspoons of lemon juice
  • 1 shot of cherry amaretto (optional)

Garnish

  • Fresh cherries
  • White and dark chocolate flakes

Instructions

  1. Prepare Cherry Juice: Add fresh or frozen cherries and water into a small pot. Bring to a boil and cook on medium heat for 3–5 minutes. Gently mash cherries with a fork and simmer for 2–3 more minutes. Remove from heat and strain the mixture through a fine mesh sieve, pressing gently to extract juice. Discard solids.
  2. Sweeten and Cool Juice: Stir lemon juice and sugar into the strained juice. Reheat for 2–3 minutes until sugar dissolves completely. Set aside to cool completely.
  3. Whip Cream: In a bowl, whisk heavy cream until stiff peaks form, about 3–5 minutes. Set aside.
  4. Mix Mascarpone Filling: In a separate bowl, whisk together mascarpone, sugar, and vanilla extract until smooth, about one minute.
  5. Combine Filling Ingredients: Gently fold whipped cream into mascarpone mixture in three increments until combined. Then fold in the cooled cherry juice also in three additions, blending until the filling has a uniform color.
  6. Prepare Coffee-Amaretto Mixture: In a wide bowl, combine brewed coffee with cherry amaretto and stir well.
  7. Layer Ladyfingers: Dip each ladyfinger quickly (about 10 seconds) into the coffee-amaretto mixture. Arrange soaked ladyfingers in an even layer in your dish.
  8. First Layer Filling: Spoon half of the cherry mascarpone filling over the ladyfingers and smooth it evenly.
  9. Second Layer: Add another layer of coffee-amaretto soaked ladyfingers over the filling. Top with the remaining cherry mascarpone filling and smooth the surface.
  10. Chill Tiramisu: Cover the dish with plastic wrap and refrigerate for at least 6 hours, preferably overnight, to set and allow flavors to meld.
  11. Prepare Cherry Sauce: About an hour before serving, combine frozen cherries, sugar, and water in a medium pot. Bring to boil, then reduce heat and simmer for 3–5 minutes until cherries soften. Remove from heat and allow to cool completely.
  12. Blend Cherry Sauce: Once cooled, blend the cherry mixture until smooth. Stir in optional cherry amaretto and lemon juice.
  13. Final Assembly and Garnish: Remove tiramisu from refrigerator. Pour cooled cherry sauce evenly over the top and smooth out. Garnish with fresh cherries and white and dark chocolate flakes.
  14. Serve: Slice and serve the beautifully layered and flavored cherry tiramisu to enjoy this spectacular dessert.
