Chicken:
- 2 boneless skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
Sandwich Fillings:
- 1 avocado, sliced
- 4 slices of your favorite cheese (Swiss, cheddar, or provolone)
- 1 small red onion, thinly sliced
- 1 tomato, sliced
Bread and Condiments:
- 4 slices of bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- Butter or olive oil for grilling the sandwiches
- Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook the chicken for about 6–7 minutes per side until cooked through and no longer pink inside. Remove from the skillet and let rest for a few minutes before slicing thinly.
- Prep the Avocado and Cheese: Slice the avocado and have your slices of cheese ready for assembling the sandwich.
- Prepare the Bread: Spread mayonnaise and Dijon mustard evenly on one side of each slice of bread to add flavor and moisture to the sandwich.
- Assemble the Sandwiches: On two slices of the prepared bread, layer the sliced chicken, avocado, cheese, thinly sliced red onions, and tomato slices. Top with the remaining bread slices, mayo side down.
- Grill the Sandwiches: Heat butter or olive oil in a skillet over medium heat. Place the assembled sandwiches in the skillet and cook for 3–4 minutes per side, pressing gently with a spatula to ensure the bread turns golden brown and the cheese melts thoroughly.
- Serve: Remove the sandwiches from the skillet. Let them cool slightly before slicing in half. Serve warm for the best taste experience.
Notes
- Feel free to use any bread that you prefer, such as sourdough, ciabatta, or whole grain.
- For extra flavor, consider adding a pinch of garlic powder or smoked paprika to the chicken seasoning.
- Use ripe but firm avocados to avoid mushy texture in the sandwich.
- To make the sandwich spicier, add a few jalapeño slices or a dash of hot sauce.
- This sandwich can be served with a side salad or chips for a complete meal.
