  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread and Condiments:

  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook the chicken for about 6–7 minutes per side until cooked through and no longer pink inside. Remove from the skillet and let rest for a few minutes before slicing thinly.
  2. Prep the Avocado and Cheese: Slice the avocado and have your slices of cheese ready for assembling the sandwich.
  3. Prepare the Bread: Spread mayonnaise and Dijon mustard evenly on one side of each slice of bread to add flavor and moisture to the sandwich.
  4. Assemble the Sandwiches: On two slices of the prepared bread, layer the sliced chicken, avocado, cheese, thinly sliced red onions, and tomato slices. Top with the remaining bread slices, mayo side down.
  5. Grill the Sandwiches: Heat butter or olive oil in a skillet over medium heat. Place the assembled sandwiches in the skillet and cook for 3–4 minutes per side, pressing gently with a spatula to ensure the bread turns golden brown and the cheese melts thoroughly.
