Ingredients

Scale

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

For the Sandwich:

  • 1 avocado, sliced
  • 4 slices of your favorite cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil, for grilling

Instructions

  1. Prepare the Chicken: Season the chicken breasts generously on both sides with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: While the chicken rests, slice the avocado and set aside the cheese slices.
  3. Prepare the Bread: Spread a thin, even layer of mayonnaise and Dijon mustard onto each slice of bread.
  4. Assemble the Sandwiches: On two slices of prepared bread, layer the sliced chicken, avocado, and cheese. Add a few slices of red onion and tomato on top, then cover each with the remaining bread slices, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add a bit of butter or olive oil. Place the assembled sandwiches into the skillet and cook until the bread is golden brown and the cheese melts, about 3-4 minutes per side. Press down gently with a spatula to help the cheese melt evenly.
  6. Serve: Remove from the heat, let the sandwiches cool slightly, then slice in half and serve warm.

Notes

  • Feel free to substitute the chicken with rotisserie chicken for a quicker meal.
  • Swap out the cheese and bread according to your preferences or dietary needs.
  • Adding a handful of arugula or spinach can bring extra freshness.
  • If you don’t have Dijon mustard, regular mustard works in a pinch.
