Ingredients

Scale

Chicken Mixture

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup frozen mixed vegetables (peas, carrots, and corn)
  • 10.5 oz can cream of chicken soup
  • 1 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper

Biscuit Topping

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.25 cup unsalted butter, melted
  • 0.5 cup buttermilk
  • 0.75 cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) to prepare for baking the casserole later.
  2. Cook Chicken: In a skillet over medium heat, cook the chicken pieces until browned and cooked through, approximately 5–7 minutes. Once cooked, set aside.
  3. Mix Chicken Filling: In a large mixing bowl, combine the cooked chicken, frozen mixed vegetables, cream of chicken soup, milk, garlic powder, onion powder, salt, and black pepper. Stir until everything is thoroughly mixed.
  4. Prepare Casserole Dish: Pour the chicken mixture into a greased 3-quart casserole dish and spread it out evenly to form the base layer.
  5. Make Biscuit Topping: In another bowl, mix together the flour, baking powder, and melted butter. Gradually stir in buttermilk until just combined to form a biscuit dough.
  6. Top the Casserole: Spoon the biscuit mixture evenly over the chicken mixture in the casserole dish, covering it completely.
  7. Add Cheese: Sprinkle the shredded cheddar cheese evenly over the biscuit layer to add a cheesy crust.
  8. Bake: Place the casserole in the preheated oven and bake for 30–35 minutes or until the biscuit topping is golden brown and fully cooked through.
  9. Cool and Serve: Remove the casserole from the oven and let it cool for a few minutes before serving to allow the layers to set.

Notes

  • Use fresh or thawed mixed vegetables if preferred instead of frozen.
  • For a richer flavor, substitute whole milk for buttermilk in the biscuit topping.
  • The casserole can be assembled ahead of time and refrigerated before baking; add a few extra minutes to baking time if baking from cold.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
