Ingredients

Scale

Main Ingredients

  • 1 15-ounce can chickpeas, rinsed and drained
  • ¼ cup all-purpose flour
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon chopped parsley
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons water

For Frying

  • 2 tablespoons canola oil

For Serving

  • Tahini sauce (as desired)

Instructions

  1. Prepare the filling: In a medium bowl, combine the rinsed and drained chickpeas with all-purpose flour, grated Parmesan cheese, chopped parsley, cumin, garlic powder, salt, and black pepper. Add two tablespoons of water and mash or blend the mixture with a fork or masher until all ingredients are well combined but still slightly chunky for texture.
  2. Form the patties: Divide the chickpea mixture into six equal portions and shape each portion into a thin, round patty about a half-inch thick, ensuring they hold together well without cracking.
  3. Heat the oil: In a large skillet, heat the canola oil over medium heat until shimmering and hot enough to fry.
  4. Cook the fritters: Carefully add the chickpea patties to the pan and cook them for about 2 to 4 minutes on each side, or until they turn golden brown and crisp on the outside and are cooked through.
  5. Drain excess oil: Transfer the cooked fritters onto a plate lined with paper towels to absorb any excess oil and keep them crispy.
  6. Serve: Serve the warm chickpea fritters with tahini sauce or your preferred dipping sauce for a tasty and satisfying snack or appetizer.

Notes

  • You can substitute Parmesan cheese with a vegetarian-friendly cheese or nutritional yeast to make it vegetarian-safe.
  • Adjust the seasoning and spices to suit your taste preferences; adding a pinch of chili flakes can add a nice kick.
  • For a gluten-free version, replace the all-purpose flour with chickpea flour or a gluten-free flour blend.
  • Ensure the patties are well-formed and compact to prevent them from falling apart during frying.
  • These fritters can be baked at 375°F (190°C) for about 15-20 minutes for a lower-fat alternative, flipping halfway through.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days and reheat in a pan or oven for best texture.
