This creamy and aromatic Coconut Rice recipe is a delicious twist on traditional rice dishes. Made with jasmine rice cooked in rich coconut milk, it’s perfect for pairing with a variety of main dishes or enjoying on its own.

Main Ingredients:

  • 2 cups jasmine rice

Coconut Mixture:

  • 13.5 ounce can full-fat coconut milk
  • 1 ½ cups water (or coconut water)
  • ½ teaspoon salt

Instructions

  1. Rinse the Rice: Rinse the jasmine rice in a fine mesh strainer until the water runs clear.
  2. Cook the Coconut Mixture: Add the coconut milk and water to a medium saucepan on the stove over high heat. Bring the liquid to a boil.
  3. Add Rice: Add the salt and rinsed rice, bring to a simmer.
  4. Simmer: Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until all of the liquid is absorbed.
  5. Rest: Remove from the heat and keep covered. Let rest for 15 minutes.
  6. Fluff and Serve: Remove the lid and fluff the rice with a fork. Serve immediately or store in an airtight container in the refrigerator for up to 7 days.
