Cottage Cheese Avocado Mixture

  • ⅔ cup + 1 tablespoon full-fat cottage cheese
  • 4.94 ounces avocado flesh (approx. 1 large avocado)
  • 2 tablespoons chives, finely chopped
  • ¼ teaspoon fine sea salt
  • Freshly ground black pepper to taste

To Garnish

  • ⅓ teaspoon red pepper flakes
  • Microgreens or alfalfa sprouts

Instructions

  1. Mash Avocado: Place the avocado flesh in a shallow bowl and mash roughly with a fork. The mixture does not need to be fully smooth; some texture is desirable.
  2. Add Cottage Cheese: Add the cottage cheese, finely chopped chives, sea salt, and freshly ground pepper to the mashed avocado. Stir gently until all ingredients are well incorporated. Taste and adjust seasoning if needed. Set the mixture aside.
  3. Toast Bread: Lightly butter the bread slices including the edges or brush them with extra virgin olive oil. Toast the bread slices in a non-stick pan over medium heat with the buttered/oiled side down until lightly browned, approximately a few minutes. Flip the slices and toast the other side for an additional 1-2 minutes until crisp. Remove from heat and let cool slightly. Alternatively, use a toaster and optionally apply butter or oil afterward.
  4. Assemble the Toast: Evenly divide the cottage cheese and avocado mixture among the toasted bread slices. Sprinkle the red pepper flakes over the top and garnish with microgreens or alfalfa. Serve immediately and enjoy!
