  • 14 ounces canned green beans, drained and rinsed

Instructions

  1. Sauté the vegetables: Heat 2 tablespoons of olive oil in a large stock pot over medium-high heat. Add the finely diced onion, thinly sliced carrots, and celery sticks. Cook, stirring occasionally, until the vegetables become tender and fragrant.
  2. Cook the ground beef: Add 2 pounds of ground beef to the pot with the vegetables. Cook until the beef is browned and no longer pink, breaking it up as it cooks for even browning.
  3. Add aromatics and spices: Stir in the minced garlic, cumin, chili powder, oregano, Kosher salt, and black pepper. Cook for 1 to 2 minutes to allow the spices to release their flavors and become aromatic.
  4. Add canned ingredients and potatoes: Mix in the canned diced tomatoes (both plain and with green chilies), chili beans, corn, green beans, and chopped Yukon gold potatoes. Pour in the beef broth and stir to combine all ingredients.
