Cake:

  • 3 eggs
  • 1 ¼ cups sugar
  • 2 ¼ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ⅓ cup butter (softened)
  • ⅓ cup Greek yogurt (plain)
  • 2 ½ cups fresh cranberries
  • 2 tsp vanilla extract
  • 2 oz juice of half an organic orange

Orange Glaze:

  • 2 tbsp sugar
  • Juice of an orange (for glaze)

Instructions

  1. Preheat Oven: Preheat oven to 350℉ (175℃) and grease and flour an 8″ springform pan.
  2. Prepare Cranberries: Toss cranberries in a little flour and set aside.
  3. Mix Eggs and Sugar: Beat sugar and eggs in a large bowl until light and fluffy.
  4. Combine Dry Ingredients: Sift flour and baking powder together. Add to the egg mixture with softened butter, mixing well. Stir in yogurt.
  5. Add Cranberries: Mix in cranberries and vanilla until evenly combined. Pour batter into prepared pan.
  6. Bake: Bake for 50-60 minutes. Test for doneness with a cake tester. Cool for 15 minutes before removing from pan.
  7. Make Glaze: In a pot, simmer sugar and orange juice to create a sticky glaze.
  8. Glaze Cake: Brush warm cake with orange glaze. Decorate with glazed and sugared cranberries as desired.
