Cake:
- 3 eggs
- 1 ¼ cups sugar
- 2 ¼ cups all-purpose flour
- 2 ½ tsp baking powder
- ⅓ cup butter (softened)
- ⅓ cup Greek yogurt (plain)
- 2 ½ cups fresh cranberries
- 2 tsp vanilla extract
- 2 oz juice of half an organic orange
Orange Glaze:
- 2 tbsp sugar
- Juice of an orange (for glaze)
- Preheat Oven: Preheat oven to 350℉ (175℃) and grease and flour an 8″ springform pan.
- Prepare Cranberries: Toss cranberries in a little flour and set aside.
- Mix Eggs and Sugar: Beat sugar and eggs in a large bowl until light and fluffy.
- Combine Dry Ingredients: Sift flour and baking powder together. Add to the egg mixture with softened butter, mixing well. Stir in yogurt.
- Add Cranberries: Mix in cranberries and vanilla until evenly combined. Pour batter into prepared pan.
- Bake: Bake for 50-60 minutes. Test for doneness with a cake tester. Cool for 15 minutes before removing from pan.
- Make Glaze: In a pot, simmer sugar and orange juice to create a sticky glaze.
