For The Cucumber Sandwiches
- 1 Large Seedless Cucumber
- 1/4 cup rice vinegar
- 1/2 teaspoon celery seed
- 1 teaspoon celery salt
- 1/2 tablespoon dill
- 1/2 tablespoon buttermilk powder (optional)
- 1 small sweet onion, thinly sliced (optional)
- 1/4 cup thinly sliced chives (optional)
- 1 package Party Rye bread
- 2 packages cream cheese, softened
- Dried Dill for Garnish
For The Spinach Dip
- 1 10-ounce box frozen spinach, thawed and drained
- 1 16-ounce container sour cream
- 1 cup mayonnaise
- 1 package Knorr Vegetable Recipe Dip Mix
- 3 green onions, thinly sliced
- 1 small can water chestnuts, finely chopped
- 1 tablespoon pickle juice
- 1/2 tablespoon buttermilk powder (optional)
- 1 teaspoon lemon pepper
- 1/4 cup very finely diced carrots (optional)
- 1 cucumber, sliced for dipping
- Pita chips for dipping
- For The Cream Cheese Sandwiches – Slice cucumber, onions, and chives. Marinate in vinegar mixture. Whip cream cheese, add cucumber juice, spread on bread, top with marinated vegetables, and dill. Serve with Spinach Dip.
- For The Spinach Dip – Drain spinach well. Mix mayo, pickle juice, buttermilk powder, and lemon pepper. Combine with Knorr mix, sour cream, carrots, water chestnuts, and green onions. Fold in spinach. Chill before serving.
