  • 50 ml milk
  • 1 garlic clove, finely minced
  • 1 tsp agave syrup
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp fresh chives, finely chopped

Instructions

  1. Grate the Vegetables: Peel and seed the butternut squash, then grate it along with the peeled potato. Set aside the grated vegetables.
  2. Mix the Fritter Batter: In a large bowl, combine the grated butternut squash and potato with the eggs, all-purpose flour, cornstarch, shredded cheddar cheese, chopped parsley, smoked paprika, ground cumin, salt, and pepper. Mix thoroughly until everything is well incorporated.
  3. Heat the Oil: Pour vegetable oil into a large skillet and heat it over medium heat until hot but not smoking, preparing it for frying the fritters.
  4. Cook the Fritters: Spoon about 2 tablespoons of the mixture into the skillet for each fritter, flattening them slightly with the back of the spoon. Fry for 3–4 minutes on each side or until the fritters are golden brown and crispy.
  5. Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil. Keep them warm while preparing the dip.
  6. Prepare Garlic Dip: In a separate bowl, whisk the low-fat quark with milk until smooth. Add the minced garlic, agave syrup, salt, pepper, and finely chopped chives. Stir well to blend flavors.
