Ground Beef Filling:

  • 1 pound lean ground beef (90%)
  • 1 packet of taco seasoning
  • 3/4 cup red enchilada sauce

Assembly:

  • 2 1/2 cups Oaxaca cheese or Mexican cheese or Monterey Jack
  • 10 corn tortillas
  • 1 tbsp olive oil

Instructions

  1. Preheat Oven: Preheat oven to 450°F.
  2. Cook Ground Beef: Brown the ground beef in a skillet over medium-high heat. Stir in taco seasoning and enchilada sauce. Simmer and then remove from heat.
  3. Prepare Tortillas: Microwave tortillas wrapped in a damp paper towel for 30-60 seconds to soften.
  4. Assemble Tacos: Brush one side of each tortilla with olive oil. Fill with cheese and beef, fold over, and place on a baking sheet.
  5. Bake Tacos: Bake for 16 minutes until crispy and cheese is melted. Let cool for 3 minutes before serving.
