Honey Mixture

  • ⅓ cup (110 g) honey
  • 1½ tsp hot sauce (like Frank’s or Cholula)
  • ¾ tsp chili flakes

Chicken and Coating

  • 2 × 250 g (9 oz) chicken breasts, halved horizontally
  • 2 tsp paprika
  • 1 tsp salt
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper
  • 35 g (¼ cup) plain flour
  • 2 eggs, beaten
  • 65 g (1 cup) Panko breadcrumbs

For Frying and Topping

  • 68 tbsp vegetable oil, for frying
  • 200 g (7 oz) feta cheese, crumbled

Instructions

  1. Infuse the honey: In a small bowl, combine honey, chili flakes, and hot sauce. Warm the mixture slightly on the stove or in the microwave to blend the flavors, then let it sit to intensify the spiciness.
  2. Slice & season the chicken: Carefully slice each chicken breast horizontally to create thin, even cutlets. In a small bowl, mix paprika, salt, onion powder, garlic powder, dried oregano, black pepper, and cayenne pepper. Divide the spice mix equally, adding half to the flour and the other half to the Panko breadcrumbs for seasoning.
  3. Dredge for crispiness: Prepare three stations: one with the spiced flour, one with beaten eggs, and one with the spiced Panko breadcrumbs. Dip each chicken cutlet first into the flour, then the egg, and finally coat it well with the Panko mixture, pressing firmly to ensure an even coating.
  4. Pan-fry to golden: Heat vegetable oil in a skillet over medium-high heat. Fry each chicken cutlet for 3–4 minutes on each side until deep golden brown and crispy. Transfer the fried cutlets to a wire rack to drain excess oil and maintain the crispiness.
  5. Add feta & broil: Place the cooked chicken cutlets on a baking sheet, evenly top each piece with crumbled feta cheese, and broil in the oven for 1–2 minutes, just until the feta begins to brown slightly and melt.
  6. Drizzle the honey: Generously spoon the warm spicy honey mixture over the hot feta-topped chicken. Serve immediately to enjoy the contrast of textures and flavors in every bite.

  • For extra heat, increase the amount of chili flakes or add more hot sauce to the honey mixture.
