Instructions

  2. Coat the fish: Dip each cod fillet into the egg mixture to fully coat. Then place the fillet on a cutting board and sprinkle both sides evenly with superfine almond flour (about 1/4 cup per fillet), pressing gently with your hands to ensure the coating adheres well. This pressing method prevents soggy almond flour and ensures a crispy crust.
  3. Heat the oil: Pour avocado oil into a large nonstick frying pan until it reaches about 1/2 inch in depth. Heat the oil over medium-high heat for 3 to 5 minutes, until it is hot and shimmering, perfect for frying.
  4. Fry the fish (first side): Carefully place the coated fish fillets into the hot oil, cooking in batches if necessary to avoid overcrowding. Fry the bottom side of the fish until golden brown and crisp, approximately 3 to 4 minutes.
