Cuban Sandwich Ingredients:
- 1 Cuban loaf or wide Italian or French bread (1 pound)
- 2 tablespoons butter (if using a cast iron skillet)
- 2–4 tablespoons softened butter (2 TBS for skillet, 4 TBS for panini press or grill pan)
- 3 tablespoons yellow deli mustard
- 3 tablespoons mayonnaise
- 1 1/2 tablespoons reserved unused mojo pork marinade (in directions)
- 8 ounces Swiss Gruyere cheese, thinly sliced
- 4 large dill pickles, thinly sliced crosswise
- 1 pound mojo Cuban roast pork, sliced
- 6 ounces Black Forest or smoked ham, thinly sliced
- Slice the Bread: Slice bread in half lengthwise then in half vertically. Toast all halves of the bread in a panini press, grill pan, or cast iron skillet until golden, about 2 minutes.
- Prepare Mustard Spread: Whisk together mustard, mayonnaise, and 1 ½ tablespoons of mojo marinade. Spread over all 4 cut sides of the bread.
- Assemble the Sandwich: Layer cheese, pickles, pork, and ham on the bottom half of the bread. Top with more cheese. Repeat for the second sandwich.
- Cook the Sandwich: Grill in a panini press or on a grill pan/skillet until golden and the cheese is melted. For skillet method, toast on both sides with butter and press down.
- Serve: Cut each sandwich in half or quarters and enjoy!
