For the Date Caramel Sauce:

  • About 9 large medjool dates, pitted (5½ ounces)
  • 1 cup oat milk, store-bought or homemade (see Notes)
  • 1 ½ teaspoons vanilla extract
  • ⅛ teaspoon fine sea salt
  • 1 to 2 tablespoons maple syrup, optional (or brown rice syrup)

Instructions

  1. Soak: Place pitted dates in a bowl and cover with boiling water. Set aside for 15 to 20 minutes to soak, then drain well.
  2. Blend: In a blender combine the softened dates, oat milk, vanilla, and salt. Blend on high speed until smooth.
  3. Heat: Pour the caramel into a small, heavy-bottom saucepan. Taste for sweetness, and add maple syrup if desired. Slowly bring the mixture to a simmer, whisking frequently. Cook for about 3 minutes or until fragrant and slightly darker in color.
  4. Serve: If the caramel sauce is thicker than you like, whisk in a touch more milk and maple syrup. Serve warm or chilled.

Notes

  • For a creamier texture, use oat milk with a higher fat content.
  • If you prefer a thinner consistency, adjust by adding more oat milk when blending.
