Instructions

  1. Make the Dough: In a large bowl, whisk together the flour, granulated sugar, salt, and active dry yeast. Add the warm milk, melted unsalted butter, and egg. Mix until a rough dough forms. Knead on a floured surface for 8–10 minutes (or use a stand mixer with a dough hook for 5–6 minutes) until smooth and elastic. Place the dough in a lightly greased bowl, cover, and let rise in a warm place for 1–1.5 hours, or until doubled in size.
  2. Roll and Layer: Punch down the risen dough and divide it into 6 equal pieces. Roll out each piece into a very thin rectangle. Spread a thin layer of softened butter over the entire surface. If making sweet cruffins, sprinkle with cinnamon sugar or spread with jam or chocolate; if making savory, add grated cheese. Roll each rectangle tightly into a log, then slice it lengthwise to create two long strips.
  3. Shape the Cruffins: Take each strip and coil it into a spiral, ensuring the cut edges (layers) are facing outward to show off flakiness. Place each spiral gently into a greased muffin tin cavity. Repeat with the remaining dough and strips. Lightly cover the tin and allow the cruffins to rise for 30 minutes.
  4. Bake: Preheat your oven to 375°F (190°C). Bake the cruffins for 20–25 minutes until they are golden brown, crisp, and flaky.
  5. Cool and Decorate: Let the cruffins cool in the muffin tin for 10 minutes before removing them to a wire rack. For sweet cruffins, dust with powdered sugar or drizzle with melted chocolate. For savory versions, sprinkle over a little flaky salt while still warm.
