Instructions

  1. Heat the Oil and Sauté Onion: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent and soft.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant, taking care not to burn it.
  3. Add Broth and Vegetables: Pour in the vegetable broth and add the diced potatoes and sliced carrots. Bring to a boil.
  4. Simmer Vegetables: Reduce the heat to low, cover, and let the soup simmer for 10-15 minutes, or until the potatoes and carrots are tender when pierced with a fork.
  5. Add Pierogi: Add the frozen pierogi directly to the soup and cook for an additional 5-7 minutes, until the pierogi are heated through and tender.
  6. Season and Add Dill: Stir in the chopped fresh dill, salt, and black pepper. Taste and adjust seasoning as needed.
