- Preheat and prepare dish: Preheat the oven to 375 degrees F. Spray a 9 x 13 casserole dish with non-stick cooking spray to prevent sticking.
- Cook the ground beef: In a large skillet over medium heat, cook the ground beef, breaking it up with a spatula, until browned. Drain any excess grease to keep the dish from becoming too oily.
- Sauté vegetables: Add the diced onions and diced red bell peppers to the skillet with the beef. Cook for 2-3 minutes until softened and fragrant.
- Add seasoning and tomatoes: Stir in the taco seasoning and the can of Rotel tomatoes with green chilis, cooking for another 2-3 minutes to blend the flavors.
- Mix beans and sour cream: Add the drained pinto beans and sour cream to the skillet mixture, stirring well. Remove the skillet from the heat once combined.
- Prepare the chips: Break the Doritos chips into medium-sized pieces; avoid crushing them too finely to preserve texture.
- Layer the casserole – first layer: Spread one-third of the broken Doritos chips evenly on the bottom of the casserole dish. Then top with half of the ground beef mixture followed by one-third of the shredded Colby Jack cheese.
- Layer the casserole – second and third layers: Add the next one-third of the Doritos chips over the cheese, then top with the remaining ground beef mixture and another one-third of the cheese. Finally, spread the remaining Doritos chips and shredded cheese evenly on top.
- Bake the casserole: Cover the dish with foil to keep moisture in and bake in the preheated oven for 25 minutes until the cheese is melted and bubbling.
- Add toppings and serve: Optionally garnish with extra toppings like diced green onions. Serve warm for the best taste.

- For extra crunch, remove the foil during the last 5 minutes of baking.
