Ingredients

Scale

Soup Base

  • 1 tablespoon sesame oil
  • 2 teaspoons fresh ginger, minced
  • 3 garlic cloves, minced
  • 6 cups low-sodium vegetable broth
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili garlic sauce (optional)

Vegetables and Dumplings

  • 1 cup mushrooms, sliced (shiitake or cremini preferred)
  • 3 cups baby bok choy or spinach, chopped
  • 1216 frozen dumplings or potstickers

Garnishes

  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds
  • Black pepper, to taste
  • Red pepper flakes (optional)

Instructions

  1. Heat Sesame Oil and Aromatics: Heat sesame oil in a large pot over medium heat. Add minced ginger and garlic, and sauté for 1–2 minutes until fragrant to build the flavor base.
  2. Add Broth and Seasonings: Stir in low-sodium vegetable broth, soy sauce, rice vinegar, and chili garlic sauce (if using). Bring the mixture to a gentle boil to combine the flavors.
  3. Cook Mushrooms: Add sliced shiitake or cremini mushrooms to the pot and simmer for 3–4 minutes until they become tender and impart flavor to the broth.
  4. Add Greens: Stir in chopped baby bok choy or spinach, then simmer for another 2–3 minutes until the greens are wilted but still vibrant.
  5. Cook Dumplings: Gently add the frozen dumplings or potstickers to the simmering soup and cook for 5–7 minutes until fully cooked through and heated.
  6. Serve and Garnish: Ladle the hot soup into bowls and top with chopped green onions, toasted sesame seeds, black pepper, and optional red pepper flakes for added heat. Serve immediately.
