Beef Marinade

  • 1 pound beef steak, thinly sliced
  • 2 tablespoons cornstarch

Sauce

  • 1 and 1/4 cup beef or chicken broth
  • 1 tablespoon cornstarch
  • 3 tablespoons low sodium soy sauce
  • 3 tablespoons oyster sauce

Vegetables

  • 1 cup broccoli florets
  • 1/2 onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup snow peas
  • 1 cup celery, sliced (about 2 stalks)
  • 1 medium carrot, sliced
  • 1 can young corn
  • 2 tablespoons avocado oil

Instructions

  1. Marinate the Beef: In a bowl, combine the thinly sliced beef steak with 2 tablespoons cornstarch and 1/2 teaspoon baking soda. Mix well and set aside while preparing the sauce.
  2. Prepare the Sauce: In another bowl, whisk together 1 and 1/4 cup beef or chicken broth, 1 tablespoon cornstarch, 3 tablespoons low sodium soy sauce, and 3 tablespoons oyster sauce. Set the sauce mixture aside.
  3. Cook the Beef: Heat a pan or wok over medium-high heat and add 2 tablespoons of avocado oil. Fry the marinated beef until browned on all sides, about 3-4 minutes. Once cooked, remove the beef from the pan and place on a plate.
  4. Cook the Vegetables: In the same pan, add 1 tablespoon of oil. Sauté the sliced onions until fragrant, approximately 1-2 minutes. Add the minced garlic and sauté for 30 seconds until aromatic. Add the sliced carrots and stir-fry until tender, about 2-3 minutes. Then, add broccoli florets, young corn, and celery slices, stir-frying for an additional 2 minutes. Remove the mixed vegetables from the pan and set aside.
  5. Combine and Finish: Pour the prepared sauce mixture into the pan. Stir and whisk it over medium heat until it begins to boil and thickens slightly. Return the cooked beef and mixed vegetables to the pan. Add snow peas last and stir everything thoroughly until the beef and vegetables are evenly coated in the sauce, cooking for another 1-2 minutes.
  6. Serve: Remove from heat and transfer the Beef Chop Suey to a serving plate. Serve hot over steamed rice and enjoy your delicious homemade meal.
