Ingredients

Scale

Chicken Mixture

  • 2 cups diced chicken (rotisserie recommended)
  • 2/3 cup buffalo sauce

Cream Cheese Mixture

  • 8 oz softened cream cheese
  • 2/3 cup sour cream
  • 1 tsp garlic powder

Cheese and Garnishes

  • 1 cup shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella cheese
  • 2 diced green onions

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the dip.
  2. Mix Chicken and Buffalo Sauce: In a bowl, combine the diced chicken with the buffalo sauce and set aside to allow the flavors to meld.
  3. Prepare Cream Cheese Mixture: In a separate medium bowl, use a hand mixer to whip together softened cream cheese, sour cream, and garlic powder until the mixture is fluffy and smooth.
  4. Combine Mixtures: Add the buffalo chicken mixture, diced green onions, and half of the shredded cheddar cheese into the cream cheese mixture. Stir well to evenly incorporate all ingredients.
  5. Assemble in Baking Dish: Grease a 9×9 inch baking pan and spread the prepared mixture evenly. Top with the remaining cheddar cheese and all the shredded mozzarella cheese to create a cheesy crust.
  6. Bake the Dip: Place the baking pan in the oven and bake for 20 minutes or until the dip is bubbly and the cheese on top is melted and lightly browned.
  7. Serve and Garnish: Remove from oven and let cool slightly. Serve warm with your choice of chips, baguette slices, crackers, or celery sticks. Optionally, garnish with parsley, additional green onions, or blue cheese crumbles to enhance flavor and presentation.

Notes

  • You can substitute rotisserie chicken with cooked shredded chicken breast.
  • Adjust the amount of buffalo sauce based on your preferred spice level.
  • For a thicker dip, use less sour cream or add more cream cheese.
  • Leftovers can be refrigerated for up to 3 days and reheated before serving.
  • Serve with celery sticks and blue cheese dressing for a classic buffalo wing complement.
