Main Ingredients
- 1½ lb sirloin steak (or ribeye, strip steak, or tenderloin), cut into 1 inch cubes

Marinade Ingredients
- ½ cup coconut aminos
- 2 tbsp toasted sesame oil (or olive oil for AIP)
- 4 garlic cloves, peeled
- 1 pitted medjool date (or 2 tsp maple syrup for non-Whole30)
- 1 inch fresh ginger
- Optional: 2 tsp gochugaru (Korean chili pepper flakes) – omit for AIP
For Garnish

- Chopped green onions
- Prepare the Steak: Cut the sirloin steak into 1 inch cubes or bite-sized pieces and place them in a resealable bag.
- Make the Marinade: Combine coconut aminos, toasted sesame oil, peeled garlic cloves, medjool date or maple syrup, fresh ginger, and optional gochugaru in a blender. Blend until smooth to create a flavorful Korean-inspired marinade.
- Marinate the Steak: Pour the blended marinade over the steak pieces in the resealable bag. Seal the bag and massage to evenly coat the steak. Refrigerate for at least 2 hours or up to overnight to let the flavors infuse.
- Drain and Discard Marinade: Remove the marinated steak from the fridge, drain off the excess marinade, and discard it to prevent steaming rather than searing during cooking.
- Cook on Stovetop: Heat the avocado oil in a large skillet over medium-high heat until sizzling hot. Add the steak pieces in a single layer and sear for 2 minutes on one side. Flip and cook for another 2 minutes until golden brown and cooked through.
- Cook in Air Fryer (Alternative): Preheat the air fryer to 400°F for 5 minutes. Arrange the steak bites in a single layer inside the air fryer basket (cook in batches if necessary). Air fry for 10 minutes, flipping the pieces halfway through cooking, until golden and cooked through.
- Garnish and Serve: Remove the cooked steak bites from heat or air fryer. Garnish generously with sesame seeds (omit for AIP) and chopped green onions before serving to add a fresh, nutty finish.
Notes
- For AIP (Autoimmune Protocol) compliant version, omit sesame seeds and use olive oil instead of sesame oil.
- Marinating overnight will deepen the flavor and tenderize the steak more thoroughly.

- Using ribeye or tenderloin instead of sirloin will result in even more tender, juicy bites.
