This Lemon Spinach Pasta recipe is a delightful combination of creamy ricotta, zesty lemon, and nutritious spinach tossed with rigatoni pasta. It’s a quick and easy dish perfect for a weeknight dinner.
12 ounces rigatoni
10 ounces spinach
1½ cups ricotta, 1 tablespoon extra virgin olive oil, 1 cup parmesan cheese (grated), 1 teaspoon lemon zest, ⅛ teaspoon nutmeg, 1 teaspoon salt, ¼ teaspoon black pepper
1. Bring a large pot of water to a boil, then add salt. Add pasta and halfway through, add spinach. Cook until al dente.
2. In a mixing bowl, combine ricotta, parmesan, olive oil, lemon zest, nutmeg, salt, and pepper. Whisk until smooth.
3. Reserve a cup of pasta water, drain pasta, and toss with the ricotta mixture. Add pasta water if needed. Serve with black pepper and lemon zest.
