Peach Filling:

  • 2 large fresh peaches (1/2 lb) or canned peaches, drained
  • 2 tablespoons granulated sugar
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract

Topping:

  • 1/4 cup sliced almonds

Glaze:

  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk (adjust for desired consistency)

Instructions

  1. Preheat and Prepare the Pastry Base: Preheat your oven to 400˚F. Thaw the puff pastry for about 20 minutes at room temperature until it unfolds easily. Cut into 9 equal squares and arrange them on a parchment-lined baking sheet, ensuring a 1-inch gap between each square.
  2. Prepare the Peach Filling: Slice the peaches into 1/3-inch thick slices. Place them in a medium mixing bowl. Add sugar, flour, cinnamon, and vanilla extract. Gently fold the mixture with a spatula until peaches are evenly coated.
  3. Assemble the Tartlets: Layer peach slices in the center of each pastry square, avoiding the edges to prevent juice from spilling. Brush the edges of the pastry generously with the beaten egg. Sprinkle sliced almonds over the edges.
  4. Bake the Tartlets: Bake the tartlets in the center rack of your preheated oven for 17–19 minutes. Rotate the baking sheet halfway through to ensure even cooking. Remove from the oven when the edges are puffed and golden. Allow them to cool on the pan for 10 minutes.
  5. Prepare and Drizzle the Glaze: In a small bowl, mix together powdered sugar, vanilla extract, and milk. Adjust the milk to reach your desired glaze consistency. Drizzle the glaze over the cooled pastries.
