Ingredients

Scale

Chicken and Wraps

  • 1 pound grilled chicken breast
  • 6 whole wheat tortillas
  • Romaine lettuce leaves (as needed)

Fillings

  • 15 ounces black beans (one can, drained and rinsed)
  • 8 ounces corn (one can, drained well)
  • 3/4 cup pico de gallo
  • 1 cup shredded cheddar cheese (lite or fat free)
  • 1/3 cup lite mayonnaise

Instructions

  1. Prepare Chicken: Cut the grilled chicken breast into thin strips to make it easy to layer in the wraps.
  2. Assemble Wraps: Lay a whole wheat tortilla flat on a clean surface. Place one or two romaine lettuce leaves in the center. Add 2 tablespoons of black beans, 1 tablespoon of drained corn, and 2 tablespoons of pico de gallo on top of the lettuce.
  3. Add Chicken and Cheese: Layer the chicken strips over the vegetables, then drizzle a spoonful of lite mayonnaise evenly across the filling. Sprinkle 2-3 tablespoons of shredded lite cheddar cheese on top.
  4. Roll Wrap: Carefully roll the tortilla tightly around the filling to create a neat wrap. Repeat this process for all six tortillas.
  5. Serve: Just before serving, cut each wrap in half diagonally for easier eating and an attractive presentation. Enjoy your fresh and delicious Southwest Chicken Wraps!

Notes

  • You can substitute the pico de gallo with salsa or chopped fresh tomatoes and onions.
  • For extra heat, add sliced jalapeños or a dash of hot sauce inside the wrap.
  • Use low-fat or fat-free cheese and mayonnaise to keep the wraps lighter and healthier.
  • These wraps can be made ahead and wrapped tightly in foil to keep refrigerated for up to 24 hours.
  • To make this meal gluten-free, substitute the whole wheat tortillas with gluten-free wraps.
