Coffee Base
- 1 ½ teaspoons instant coffee (such as Starbucks Via packs)
- ¼ cup (59ml) hot water
Mousse Mixture
- 1 cup (237ml) heavy whipping cream, cold
- 1 ½ cups (170g) powdered sugar
- 8 ounces (226g) mascarpone cheese or cream cheese (low fat cream cheese is fine)
- 1 teaspoon vanilla extract
For Topping
- 1 tablespoon (5g) unsweetened cocoa powder
- 1 ounce (33g) semi-sweet baking chocolate
- Prepare coffee: Place the instant coffee in the hot water and stir well. Let the mixture cool for about 5 minutes to prevent melting the cream when combined later.
- Whip the cream: Beat the cold heavy whipping cream with a mixer until stiff peaks form. Chill the whipped cream until ready to use to maintain its texture.
- Mix cheese and sugar: Using a hand mixer, blend the powdered sugar with mascarpone or cream cheese until smooth and creamy. Add the vanilla extract and one tablespoon of the cooled coffee, mixing thoroughly to incorporate flavors. Add more coffee to taste, up to the full amount, depending on how strong you want the tiramisu flavor; this recipe uses all of it for full intensity.
- Fold in whipped cream: Gently fold the whipped cream into the coffee and cheese mixture to maintain a light and airy consistency without deflating the cream.
- Assemble the mousse: Transfer the tiramisu mousse into a gallon-size Ziploc bag fitted with a large round or piping tip #1M for ease of layering. Pipe a small amount into the bottom of 4 serving glasses, ideally 6-ounce size.
- Layer and dust: Dust the mousse layer with unsweetened cocoa powder. Continue layering mousse and cocoa powder alternately to fill the glasses.
- Final topping: On the topmost layer, grate the semi-sweet baking chocolate over the mousse instead of cocoa powder to add a sweet, rich first taste rather than bitter cocoa flavor.
- Chill before serving: Cover the glasses and refrigerate the tiramisu mousse until ready to serve, allowing the flavors to meld and the dessert to firm up.
Notes
- Use cold heavy whipping cream for best whipping results.
- You can substitute an 8-ounce carton of whipped topping for the heavy cream if preferred.
- Adjust coffee quantity to your taste preference for tiramisu strength.
- Chilling the mousse thoroughly improves texture and flavor integration.
