  • 1 cup caster sugar
  • Black food coloring (a few drops)

Instructions

  1. Prepare the container. Line a heat-safe 8×10 or 9×9-inch container with parchment paper and set aside to ensure easy removal of the candy once set.
  2. Combine sugar base ingredients. In a large pot over medium-low heat, add granulated sugar, light corn syrup, and water. Stir or whisk gently until the sugar dissolves completely.
  3. Heat to hard crack stage. Increase the heat to medium and attach a candy thermometer to the pot. Stop stirring once the sugar has dissolved. Heat the mixture until it reaches 300-310°F (hard crack stage), aiming for about 305°F for ideal texture.
  4. Add baking soda. Remove the pot from heat and immediately whisk in the baking soda for no more than 10 seconds until fully incorporated. The mixture will bubble up as the baking soda creates air pockets for a light texture.
  5. Pour and cool. Carefully pour the bubbling mixture into the prepared container. Allow it to cool completely for 1-2 hours until hardened.
  6. Break into pieces. Once cooled, use a knife to break the hardened candy into coal-sized chunks and smaller shards. Save smaller pieces for use as toppings on cookies, cakes, or ice cream.
  7. Prepare black sugar coating. Place caster sugar in a plastic bag and add a few drops of black food coloring. Seal the bag and knead it until the color is evenly distributed. Add more food coloring if necessary.
  8. Melt chocolate. Melt the dark or semisweet chocolate in 30-second bursts in the microwave, stirring between each interval until smooth and fully melted.
  9. Coat coal pieces. Dip each candy piece into the melted chocolate, allowing excess to drip off. Place coated pieces on a parchment-lined baking sheet.
  10. Apply black sugar. Just before the chocolate sets completely, toss each chocolate-covered piece in the prepared black sugar to coat evenly.
  11. Set and serve. Let the chocolate fully harden at room temperature. Once set, the edible coal candy is ready to enjoy or package as gifts.
  12. Optional packaging. For a rustic look, package the coal candy in small burlap bags. Decorate with permanent marker designs or labels tied with ribbon for charming presentation.
